Carpano, using a recipe from his grandmother, is credited with making the first commercial vermouth in the sweet red or Italian style. Originally vermouth was a beverage based on the plant wormwood (Wermut in German) and used medicinally. Since Carpano the essential feature of vermouth, the aperitif, is that it is flavoured with a large number of different plants. Good vermouth should be complex with no single botanical predominating. Absenteroux is a vermouth which combines wormword, lemon, anise, gentian and white wine from Provence (Ugni Blanc, Grenache Blanc, Vermentino & Clairette). Colour: Light green with hints of yellow and brown. Nose: Complex and subtle with fresh notes of wormwood, gentian and spices. Mouth: A rich and powerful attack of wormwood followed by sweet, fruity, gentian spicey notes.
Candied sweetness rolls out of the glass, pulling a string of fruit and herbs behind it: apples, pears, muscat grapes and tarragon. The sweetness is syrupy but tempered by grape notes and floral touches: meadow grass and flowers. Much drier than the nose suggests, with the sweetness pushed to one side and well-balanced orchard fruit leaping to the fore. Soft herbs float around a core of apple, with dry white wine and a hint of tartness providing a contrast. Long and dry, with apple skin and bittersweet flesh fading to reveal grapes and leafy green herbs.
